I love Jessica Alba, because besides being a beauty, she is also a good cook… and she makes the best light turkey meatballs I’ve ever had. She had cooked them on Martha Stewart’s show and since then I have duly honored the recipe many times, which I decided to share with you.
Materials:
- 900 grams of minced turkey (put the breast fillet through the food processor)
- 2 eggs
- 2 tablespoons of spice mix
- 1/4 cup chopped carrots
- 1/4 cup chopped onion
- 1/4 cup finely chopped zucchini
- 1 tablespoon of salt
- 3/4 cup chicken broth
- Bread crumbs – Jessica uses Panko, a variety of Japanese bread but you get to choose what you want, even toast bread, we won’t spoil it there.
Execution:
- Shape the meatballs and in a large pan, put some oil to burn.
- Place the meatballs and bake for 7 minutes.
- Add half a cup of chicken stock, cover, reduce the heat and let them boil until almost all the stock is absorbed. Add the remaining 1/4 cup of chicken stock and increase the heat.
- Serve and enjoy without guilt!
